Ingredients

  • ½ cucumber
  • 1 yellow bell pepper
  • 2 celery stems, with leaves
  • 1 clove of garlic
  • 1 avocado
  • 1 handful flat-leaved parsley
  • 1 handful coriander
  • 1 tbsp apple cider vinegar
  • 1 tbsp extra virgin olive oil
  • Salt and pepper (to taste)
  • Fresh herbs (as garnish)
  • Spoonful of yoghurt (as garnish)
  • Chilli flakes (as garnish)

Preparation

 

  1. Remove the heart of the bell pepper together with the stem and seeds.
  2. Put the bell pepper and all the other ingredients (except the garnishes) in the blender.
  3. Blend until smooth, then taste and season if necessary.
  4. Top with fresh herbs, chilli flakes, and yoghurt.
